Spinach has always been a challenging green for me to grow. I've tried different varieties, growing techniques and soil conditions, but I've never been able to grow a good reliable stand of spinach. That is until this past winter when my superstar farmer friend Jen Campbell shared with me all of her tips and tricks! Since then, we've been enjoying the most beautiful and delicious spinach I've ever grown! Green Goddess Dressing
There's a good reason for this dressing to be named Green Goddess...it's simple and divine!!
Creamy Chickpea & Spinach Curry
I love adding spinach to any soups, stews, stir-fries and curries. I simply, chop, add it to the pot, cover and turn the heat off. That way it wilts and doesn't over cook! ;)
Spinach Beet Goat Cheese Salad
This recipe is great with spinach, arugula, baby kale, watercress...any greens you have around the house!
