Leeks are such a wonderful fall treat cause they're one of the first crops seeded in the spring and last out of the field in the fall...crazy! But their slow growth makes for a wonderfully light oniony flavour, perfect for any fall soups and stews. Some choose to discard the green leaves of the leek, but I love to include it into my dishes in order to add a little bit of colour to my dishes.
